What I expected: a packet of tuna mixed in with a baggie of pre-cooked Uncle Ben's Spanish Style rice, cold...PB&J if I was still hungry after...two bite-sized Snickers bars
What happened: crawfish etouffee, or as it was written in my journal: "crawfish etouffee, sweet Jesus, sweet, sweet Jesus."
I never expected it, but people took me in and cooked for me all the time. Texas sirloin, Alabama deep-fried squirrel and North Carolina venison steak, Navajo fry bread and mutton, Virginia goat cheese sandwiches, New Mexican enchiladas, California burritos, and - sweet Jesus, sweet, sweet Jesus - Louisiana crawfish etouffee.
It's all thanks to them, the people I met on the road. And for this one, thank you Paul.
