  • On her birthday she requested to be given a tiara. Not a lavish one but a tiara just fancy enough to make her feel like a princess.

    There is not much to say about this photograph.

    I had planned to make a cake as royal as she wanted to feel. The cake consisted of angel sponge soaked in rum and layered with chocolate pudding and fruit... then vanilla pudding and fruit, and second layer of chocolate pudding and fruit, and finally another layer of the vanilla. The outside was fresh whipped cream.

    This is a cake without a lot of structure. Whipped cream in a can is not strong enough to hold the fresh out of season berries. Consequently I had to hand whip the cream while the guests were waiting. Lady fingers finished it off and held the cake from sliding off the plate. It is a tricky cake to carry because the pudding acts more like a lubricant than a glue.

    As I started to poke the candles into the cake. The first attempt failed. It started to topple. In desperation I took the handful of candles and placed them in the central hole of the angel cake. One match lit the entire bundle.

    Individual wicks, pure beeswax candles, the right amount of oxygen and the magic of combustion.

    It was the only cake I ever made where our guests spontaneously sang campfire songs before happy birthday.
