  • I love the smell of cakes and cookies baking in the oven, it fills the whole house with the "freshly baked" aroma as the heat slowly transforms the mixture into an edible delight. It wafts with the anticipation of a sweet sponge with cinnamon, vanilla and toasted walnuts, which spurs your other senses of taste (mouth watering!) and sight that wait expectantly for indulgence to melt you away!
    Other smells that compete with baking for me, are the sweet smell released by the parched earth, (also usually intensely baked by the sun!) after the rain as Laxmi also mentioned. In addition, during the monsoon time, often many smells conjoin to make up a heavenly experience. Because during this rainy time in India, there is nothing more tantalizing than to sip a sweet masala chai with the aromas of ginger, cardamons, cinnamon and other spices mingling with the taste of crunchy hot pakodas (vegetables fried in gram flour mixture) and look out of the window to watch the elemental love-making between the rain and the earth under the deep dark clouds!
