  • Once I was a girl who only baked chocolate chip cookies. Two sticks of butter, a cup of white, a cup of brown, two eggs, a little salt, a little more baking powder, vanilla, a dash of cinnamon, two and a quarter cups of flour. Scoop. Bake. Eat.

    One day I woke up and said, "Today I will make bread." And on that occasion, I also said, "I will make cheese, and take these tomatoes I grew, and I will make a sandwich!" It only took me three hours to make the sandwich, unless you include the time it took to grow the tomatoes, in which case it only took me one month, three weeks, 5 days, and three hours to make the sandwich. Not bad for going a little over board on "home made."

    On March 3, 2012, I woke up and said, "Today I will make bagels," and to further complicate things, "Rosemary Salt Bagels!" Really it turned out to be much easier than I expected. Bagel making combines four of my favorite activities: kneading dough, watching things boil, baking, and eating.

    I get the same kind of high from baking something I've never baked that I get from driving somewhere I've never driven. There is always the possibility that I'll get lost along the way, but the excitement comes in finding my way back onto the correct path. There are a lot of ways to take a wrong turn both on a new road and in a new recipe, but at the end, if you are eating a warm bagel with cream cheese everything worked out just right.
