  • Some people like to sit in a quiet room. Others breathe deep and push out the all-encompassing sound: AUUuuuuuMMMmmm. Running is the key to enlightenment for others. Or rhythmic rowing down the river.

    In and out. Empty the mind. Breathe. Release.

    Prep work is what I do. It's methodical work that requires just enough attention to not slice your fingers off (usually), and there is a sense of accomplishment and finality when all your slices conform, all your vegetables are lined up in a row. Garlic smashed and then tiny-diced, soon to be a wave of background notes in a dish. Chicken cubed and marinated in a carefully saran-wrapped bowl, hiding in the fridge, waiting to join the others.

    Prep work is my meditation. Cooking is my enlightenment.
